Creamy Chipotle Chicken Pasta

Ingredients

  • 2 tablespoons olive oil
  • 1 package Georges Farmers Market® Savory Starters Pollo Asado Chicken
  • 1 (1 lb) package penne pasta
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon Kosher salt
  • 2 tablespoons chipotle pepper sauce from canned adobo peppers
  • 1 yellow bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 vidalia onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1/4 cup honey
  • 2 cups heavy cream
  • 3/4 cup frozen peas
  • 3/4 cup frozen corn
  • 3/4 cup shredded parmesan cheese

Preparation

    1. Cook pasta according to package directions in salted walter.
    2. Meanwhile, heat butter in a large skillet over medium heat.  Add peppers and onions, season with Kosher salt, and cook until softened, about 4-5 minutes.  Add garlic and cook for 1 more minute, stirring occasionally.  Remove vegetables and reserve.
    3. To the same skillet, add oil and chicken, cooking for approximately 7 minutes, stirring occasionally, until chicken is just cooked through.  Add vegetable mixture back to pan along with frozen peas and corn.  Add lemon, honey, heavy cream, adobo sauce, parmesan cheese, stirring to combine.  Cook for 3-4 minutes, until liquid thickens to a sauce consistently.
